Scheduled to open this March / April in an exclusive area of South West London, this highly anticipated Artisan Cheese Shop & Wine Bar will be set over 2 floors with a retail area, counters & seating for 20 plus persons on the ground floor, complimented by an extensive wine cellar in the basement.
Open 7 days, early until late, this independent looks to attract a wide and discerning clientele and will also offer themed tastings & wine matching events.
Offering over 150 cheeses sourced from small / independent farm suppliers from around the world – complimented by 150 plus wine bins from the New & Old World.
NB Further opening planned in 2012 and beyond.
Role
Reporting to & working closely with the Owner (a successful Cheese Merchant), this is a fantastic opportunity to manage and take ownership of a high profile, new business venture set to establish a fantastic reputation for food, wine & service.
Responsibilities:
Ensuring the Unit is presented to the highest visual standard – exceptional attention to detail essential
Delivering informed / comprehensive information on the world of cheese
Managing a small team with particular focus on product knowledge, service standards, team training & performance
General Administration & Accounting, Figure Reporting (P&L)
Marketing: Design & Development of key Marketing & Promotional strategies with a view to building an unrivalled reputation within this niche sector
Possible travel opportunities: to accompany the Owner in meeting with select producers (International)
Candidate Profile
Essential: full / comprehensive knowledge of the production, preservation & heritage of cheese making
Good knowledge of wine an advantage
Passion to deliver high levels of service & hands on management style preferred
Skill set: strong interpersonal / man management, organisation, communication, finance / cost control management
Due Diligence: up to date on current hygiene legislation
Well presented & ability to speak French an advantage
Salary & Benefits
£28,000 – £32,000 Basic Start Salary & Excellent Bonus Incentives
3 Months Probationary Period: Regular Performance Related Salary Reviews
Working Hours: 5 Straight Shifts P / Wk (50 Hrs P / Wk – 7 Day Operation)
