Dishoom is London’s first Bombay style cafe. It opened in 2010 to great reviews and a swarm of attention from the blogosphere. Tucked into Covent Garden they serve food all day from breakfast through till late snacks, with eclectic indian menus and a great range of drinks. This week in Eat My Words we interview Dishooms head chef Naved Nasir and find out what makes Dishoom tick!
Which is the last restaurant you visited and what were your thoughts?
Karahi King in Wembley – excellent, earthy, very down-to-earth cooking. Love their grills.
Which is your favourite London restaurant?
Can I say Dishoom? Genuinely I mean that. I’m really proud of what we are doing here and I love eating our food. The atmosphere is fantastic.
What is the most important attribute for a chef to have working in your kitchen?
A cool head and ability to deliver high quality food consistently under high pressure.
If you had to give one piece of advice to an up and coming chef, what would it be?
Keep your knives sharp and your spirits high,learn from every quarter possible because knowledge is key.
What would you choose for your last meal?
Why would I waste my last few hours eating I rather love to cook a great meal for loved ones.
Who would be your ideal dinner companion?
My wife, because she is my biggest fan.
Which Chef (Chef’s) do you most admire?
I love the revolutionary culinary techniques of Heston,but the chef I admire most is my guru chef imtiaz quereshi who is the grand master chef of Indian cuisine.
What is your signature dish of the moment?
Our house black dal.
