Welcome back to another instalment of Eat My Words. This week we had the pleasure of interviewing the very talented Malcolm Campbell from Lythe Hill Hotel & Spa,
Petworth Road, Surrey.

Which is the last restaurant you visited and what were your thoughts?
The Kitchin in Edinburgh. Loved everything.
Which is your favourite London restaurant?
I don’t really have one yet, but if I had to say one, l’atelier de Joel Robuchon. It’s the only restaurant that I have been to twice.
What is the most difficult part of your job?
Dealing with people
When hiring new chefs, what is the attribute you look for most?
Self motivated
If you had to give one piece of advice to an up and coming chef, what would it be?
There is no easy way, the harder you work the more you will achive.
What should a chef working for you, not ever do?
Don’t lie!!! Just tell the truth. Because the truth will always come out, sooner or later.
Which Chef (Chefs) do you most admire?
Jean-Christophe Ansanay-Alex, I worked for him on a stage in Lyon and had a fantastic time. Visionary.
What would you choose for your last meal?
Would have to be a big juicy steak on the BBQ, probably ribeye with corn on the cob, mashed potatoes, Jack Daniels BBQ sauce and a cold pint of frosty beer to wash it down.
What is your signature dish of the moment?
That’s difficult because my menu is still relatively new,
But one I really like is White Chocolate Tart, cocoa Chantilly, café au lait jelly, espresso ice cream.
