Headlam Hall a charming family owned and run 17th century country mansion stands in beautiful gardens surrounded by its own rolling farmland and offers luxurious accommodation, a stunning spa and fine local food. David Hunter (@davechef1976) is the head chef and we caught up with him for a quick chat this week.

Mark greenaways 12 picardy place in edinburgh , fantastic food cooked in a modern way without going over the top.
Which is your favourite local restaurant?
Raby hunt restaurant with rooms summer house.
What is the most difficult part of your job?
Seeing a huge turnover of staff from a front of house point of view.
What annoys you in the hospitality industry at the moment?
Poor education in catering colleges or not teaching the right kind of things.
What personal attributes do you think make a good chef?
PASSIONATE if not why bother!
If you had to give one piece of advice to an up and coming chef, what would it be?
Learn all you can eat everything and everywhere Knowledge is power!
What should a chef working for you, never do?
Tell me he is tired (we all are) get over it!!

Too many to mention Hugh Fearnley Whittingstall, Marcus Wearing and Michel Roux Jnr
People always ask chefs what their last meal on earth would be… Instead, if you had to cook one last meal (the last dish ever!) what would it be and why?
Shepherds pie because it would remind me of my mam (the only thing she could cook)
